Reminiscent of the famous London Grills, The Grill Room at Hotel Colessio presents discerning diners with inspired menus of traditional classics with a modern twist. High quality locally sourced produce and seasonally inspired dishes are the backbone of this restaurant, infused with ingenious touches from the award-winning Executive Chef, that add unexpected flair.

The state-of-the-art kitchen is equipped with a Josper Grill which is taking the culinary world by storm. Lauded by world-famous chefs including Gordon Ramsay, Heston Blumenthal and Jason Atherton, Hotel Colessio is proud to be one of the few venues in the UK to feature this type of grill.

Of Spanish origin, the Josper is a sealed oven, fuelled by a Bincho-tan ‘white’ hardwood oak charcoal, which grills meat, fish and vegetables swiftly and perfectly – creating unrivalled flavours for discriminating diners.

The outstanding menu is matched by an extensive drinks list, featuring wines, champagnes, ports and cognacs to suit any occasion.

TRAVELLING FROM THE WEST (GLASGOW)
From the M8 take the junction for the M80 and head for Stirling. From this road you then join the A80 and onwards to the M876. Take Junction 9 and at the large roundabout turn second left following the signs for Stirling centre on the A872. Follow signs for Stirling Castle towards the town centre and the Colessio hotel sits on Spittal Street on the main approach to the Castle.

TRAVELLING FROM THE EAST (EDINBURGH)
From Edinburgh take the A8 past the airport towards the Newbridge roundabout. From the roundabout take the 4th exit on to the M9 towards Forth Road Bridge / Stirling. Leave the M9 at junction 9, then at roundabout take the 5th exit onto the A872. Follow directions as above from signs for Stirling Castle.

Pre booking for dinner at the Grill Room is advisable. Guest staying on a dinner inclusive rate will have £25 per adult per night allocation to spend in The Grill Room, offering you a wide selection from the menu. Should you choose to spend anything over this amount it will be just transferred onto your bill if you have agreed at the time of check in for charges to go to your room, alternatively you can pay the difference in the Restaurant. Should you decide not to dine or if you do not spend the full allocation, there will no refund.

RICH HERITAGE & FANTASTIC MONUMENTS

Explore a region where famous battles occurred, national heroes were born and Scottish royalty held court.

The National Wallace Monument dominates the landscape and uncovers the legendary story of Sir William Wallace, Scotland’s ‘Braveheart’, whilst perched high on the Castle Rock the spectacular Stirling Castle, once home of Mary Queen of Scots, lets you step back in time with a visit to the Royal Palace and the Great Hall, the largest banqueting hall ever built in medieval Scotland.

Try one of the many guided walks and discover the city’s dark past on the Stirling Ghost Walk, beginning at the spooky Old Town Jail. Other places of interest include the Stirling Smith Art Gallery & Museum, Argyll’s Lodging, a superb mansion built around 1630 and the impressive 15th century Church of the Holy Rude. Or why not sample some ales at the Bridge of Allan Brewery Visitor Centre, follow the Mill Trail or visit one of the many potteries in the area, including the Barbara Davidson Pottery and Gift Shop at Muirhill Farm, Larbert, where you’ll find fine hand-thrown pottery and unique gift ideas, designed and created on the premises.

Nearby, relive the famous Battle at the Bannockburn Heritage Centre, visit Callendar House, an imposing mansion with a 900 year history, gift shop and tearoom and witness a marvellous feat of mechanical engineering at The Falkirk Wheel, the only rotating boatlift in the world.
